Caramel Rice Pudding

Crockpot caramel rice pudding

  • 3 cups cooked white rice
  • 1/2 cup dried cranberries or cherries or dried, chopped apricots
  • 1 tsp pure vanilla
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 TBS brown sugar
  • 1 tsp cinnamon

Instructions

    Spray inside of 2 to 3.5 quart crock pot with cooking spray. (or grease with butter)

    Mix all ingredients except sugar and cinnamon in crock.

    Cover and cook on LOW 3 to 4 hours or until liquid is absorbed.

    Stir pudding.

  5. 5

    Sprinkle pudding with sugar and cinnamon.

    Serve warm.
