  • 2 cups blueberries
  • 1/2 cup sugar
  • 2 tbsp. cornstarch
  • 1/4 cup water
  • 1 tbsp. lemon juice
  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1 1/2 tsp. baking powder
  • pinch salt
  • 3/4 cup butter, melted

    Stir together blueberries, sugar and cornstarch in saucepan.

    Mix in lemon juice and water.

    Bring to boil over medium heat.

    Reduce heat and simmer until mixture thickens (about 3 minutes).

    Let cool.

    Combine oats, flour, sugar, baking powder and salt in large mixing bowl.

    Drizzle with butter and stir until well blended.

    Spread half the mixture into well-greased 8–inch baking pan.

    Pat firmly.

    Cover with blueberry filling.

    Sprinkle remaining oat mixture over top.

    Bake at 350F for 40 to 45 minutes or until golden brown.
