Barley Garden Soup

  • 3/4 c barley
  • 1/2 c carrots, grated
  • 1 c yellow squash, grated
  • 1/2 c celery, chopped
  • 1/2 c scallions, chopped
  • 1/2 c parsley, minced
  • 2 c carrot juice
  • 1 c distilled water

Instructions

    Soak barley overnight in distilled water.

    The next day, rinse in hot water and drain well.

  3. 3

    Combine all ingredients and heat slightly.

    Serve immediately.
