BAKED SWEET POTATOES

A Cajun recipe for Baked Sweet Potatoes.

  • about 5 large sweet potatoes
  • #/5 teaspoon sea salt
  • # tablespoon lime juice
  • (zest and juice from one lime)
  • # teaspoon canola oil
  • #/5 teaspoon sea salt
  • # tablespoon ginger juice (squeezed from fresh grated ginger root)
  • #/& tablespoons dark (toasted) sesame oil

Instructions

    Take sweet potatoes and rub canola oil on them

    Then rub them with sea salt

  3. 3

    Bake whole potatoes directly on an oven rack in a 425 degrees F (220 degrees C) oven (no need to preheat the oven) for 60 minutes until soft but not mushy

    Cool and place in refrigerator overnight

  5. 5

    When thoroughly chilled, remove peel and slice into 1/4 inch slices

  6. 6

    Set aside

  7. 7

    Mix all marinade ingredients in bowl large enough to hold all sliced sweet potatoes

  8. 8

    Add sweet potatoes and toss to coat

  9. 9

    Let marinade in refrigerator for at least 2 hours
