Baked Mashed Potatoes

- 3 pounds of potatoes (about 6 large)
- 1/4 cup of finely chopped onion
- 1/4 cup of butter or margarine
- 1 – 12 ounce carton of small curd cottage cheese
- 1/4 cup of snipped parsley
- 1 teaspoon of salt
- Margarine or butter, melted

Peel, cook, and mash the potatoes

In a saucepan cook the onion in 1/4 cup of butter or margarine until tender but not brown

Stir the onion, salt, parsley, and cottage cheese into the mashed potatoes

Spoon the potato mixture into a well greased 2 -quart casserole dish

Drizzle melted butter over the top

Bake at 350 degrees for about 30 minutes or until the mixture is heated through and lightly browned on top
