Aunt Abby’s Chicken Patties

  • 6 cups of chopped, cooked chicken
  • 1/4 tablespoon of butter
  • 1 tablespoon of chopped onion
  • 1/3 cup of flour
  • 2 cups of milk
  • 2 teaspoons of salt
  • 1/4 teaspoon of black pepper
  • 3 eggs

Instructions

    Brown the onion in butter and stir in the flour, salt, and pepper.

    Pour in the milk and cook until kind of bubbly.

    Remove from heat and mix with the chopped chicken in a shallow bowl.

    Cover and put in refrigerator overnight.

    Remove from the refrigerator and shape into patties.

    Beat 3 eggs and dip patties in the eggs.

  7. 7

    Chill for 15 minutes and fry in hot oil until golden brown.
