Almandine Rice

  • 2 cups wild rice
  • 3/4 cups almonds, chopped lengthwise
  • 1/2 cup olive oil
  • 1/4 cup onion, chopped
  • 1/4 cup chives, chopped
  • 1/4 cup green onions, chopped
  • 1/4 cup green pepper, chopped
  • 4 1/2 cups chicken stock
  • salt and fresh ground pepper to taste

Instructions

    Wash rice several times to remove starch. Soak in cold water for 1 hour. Drain rice.

    Preheat oven to 325F.

    Saute onion, chives, green onion and green pepper until tender.

    Add rice and cook, while stirring, over low heat until rice begins to turn clear.

    Add stock, salt and pepper. Mix in almonds.

    Bake for 1 1/2 hours, stirring occasionally, or until rice is cooked and liquid is absorbed.
